Good morning, I made #ramen! My friend @chhavi_sa Good morning, I made #ramen!

My friend @chhavi_sachdev had sent over a bottle of beautiful #kimchi and a massive tub of chicken stock - both from @feedingyourappetite. I decided to try my hand at making kimchi ramen, something I had never made before, but a couple of online recipes seemed easy enough. And voilà, look at this gorgeousness!

Here's my #recipe (more like guidelines):

- Heat vegetable oil and sauté mushrooms
- Add kimchi and continue sautéing until it softens
- Pour in the stock and bring to a boil
- Adjust seasonings (I splashed in a bit of dark soy sauce)
- Cook ramen noodles as per packet instructions
- Divide noodles among bowls and ladle over the ramen broth
- Top with chopped spring onion greens and blanched broccoli (I don't recommend cooking the broccoli in the broth as it will lose its bright green colour)
- Add half a boiled egg and dig in

I devoured copious amounts of cheese in the name o I devoured copious amounts of cheese in the name of research for an article, not that I'm complaining.

Pictured here is Brunost from #Mumbai's @eleftheriacheese, a Norwegian-style cheese made by slowly caramelising cheese whey until it acquires a texture similar to milk fudge. It tastes like toffee caramel with a big hit of umami. There's no added sugar, salt, flavours, etc., just the natural flavours of the whey amplified by caramelisation. Brunost is considered one of Norway's iconic foods. It's usually sliced thin and served on top of toast or biscuit (often with some sort of a berry jam), and even on waffles.

Sliced apples, lettuce, dried cranberries, toasted walnuts, and brie

Dressing - evoo, apple cider vinegar, honey, ginger powder (just a pinch, optional), salt, and pepper

Mix the dressing ingredients in a small glass jar/bottle with a lid, and give it a good shake before pouring over the #salad #healthy

- Roast carrots and aubergine with garlic, salt, whole cumin, coriander and fennel seeds. 
- Tip them into sautéed baby spinach. 
- Allow to cool and top with harissa labneh (from @FoodhallIndia) plus a drizzle of harissa oil #healthy

This one has mixed lettuce, purple cabbage, red cherry tomatoes, yellow grape tomatoes, and fior di latte cheese.

Avocado toast, 2 ways: - Sliced with a fried egg o Avocado toast, 2 ways:
- Sliced with a fried egg on top plus a dash of salt, pepper, and chilli flakes
- Smashed and topped with sliced tomatoes (salt & pepper) plus a drizzle of balsamic vinegar

Who's up for #TacoTuesday? I made these whole whe Who's up for #TacoTuesday? I made these whole wheat tacos (OK, they are phulkas) with jackfruit from @wakaofoods. This Goa-based company recently launched a range of jackfruit 'meat' - unripe jackfruit available as is or in flavoured variants such as teriyaki, BBQ, and even butter (as in with butter chicken masala). They also offer jackfruit burger patties.

The company sources jackfruit directly from farmers, repurposes waste, and has adopted fair trade practices. Products have a shelf-life of one year and do not require refrigeration until opened. They're pretty easy to work with too - just open the packet, microwave the contents for 2 minutes (or heat on stovetop), and it's ready to use. 

I used their "BBQ Jack" (see last pic) to make these tacos. I liked the meaty texture of the jackfruit but I felt it could do with more flavouring. It worked fine when I topped it up with homemade salsa, crunchy purple cabbage, a dash of @torimumbai's spicy red jalapeño sauce, a squeeze of lime, and some coriander.
